“I make these quite often, and everyone at our branch likes them. They don’t last long!” says Green Bay East assistant branch manager–operations Diane Leiterman. In fact, she says, teller Kari Tuyls specifically asked her to make these granola bars for her Shorelines contribution.
“My granddaughter got the original recipe online, but I pretty much changed it all,” Diane says. “The original was three ingredients: pure maple syrup, gluten-free rolled oats, and creamy unsalted peanut butter. Now here’s mine!”
Yummy granola bars
Ingredients
1 cup super-chunky peanut butter
½ cup no-high-fructose white or dark Karo syrup
2½ cups old-fashioned oats
½ cup Craisins
¼ cup sunflower seeds
1½ Tbsp chia seeds
Optional: Semi-sweet chocolate chips
Preparation
Line an 8×8 square pan and with parchment paper and set aside.
In a large bowl, mix all dry ingredients
In a medium bowl, mix peanut butter and syrup. Warm in microwave oven in 20-second increments (probably three times), stirring between each increment. This will make it a little softer and easier to mix.
Mix peanut butter and syrup blend with the dry ingredients well. Dump into square pan and pat down.
Put in refrigerator for an hour or two — then cut up and enjoy!
